Herbs & Vegetables

Fully organic? For sure. But at the Seebacherhof in Bad Mitterndorf, they go even further than the Demeter (Worlwide Organic Association) guidelines.   Instead of a tractor, five Noriker horses are used to manage the 20 hectares of farmland as gently and sustainably as possible.  In place of artificial fertilisers and insecticides, the Seebachers rely on natural methods such as the use of nettle extracts. The Seebacher family actively promote plant diversity and grow a total of 86 plant species and some 178 varieties (36 different tomatoes alone!) the seeds of which are either home-grown or purchased from Noah's Ark stocks. At least three people each work eight hours a day nurturing the plants in their natural cycle. Every week about 100 kg of organic vegetables and 15 cups of organic herbs and flowers are delivered to the MONDI Resort kitchen - depending on the season and growth. Some produce is from the alpine pastures, sometimes from the valley. But the taste is always excellent, absolute freshness and natural ingredients.   Tip: In winter, our guests can experience a horse and carriage ride with the Seebacher's horses through the winter scenery of Grundlsee.

The noble catfish

from the Waldauers

The Waldauer dairy farm is 111 years old and spans generations. Since 2021, a noble and fine-tasting Austrian speciality was introduced to the farm: The catfish - a versatile and fine tasting fish, now housed in a warm potable water circulation system in the converted dairy barn. The young farmers Jaqueline and Lukas are keen to keep abreast of new developments and to continue the farming tradition and came across the catfish as an ideal alternative to dairy farming. Now 150 to 180 fish populate the newly adapted facility. Each weighing only 10g, the fish are brought from Burgenland to be lovingly reared- free of any medicines - and - to be processed once a month into healthy omega-3 rich food. The MONDI Resort is only too happy to be delivered 40 kilos of the firm, boneless fish every month. A truly Austrian speciality that enjoys great popularity with the restaurant guests.

Fish from the Ausseerland

These are the only farmed game fish in the whole of Austria. Approx. 110 t of fish are carefully caught by the 21 employees of the Ausseerland fisheries in Grundlsee, Toplitzsee, Hallstättersee and the natural spring ponds in Kainisch. Whether char, Reinanke or trout: Each fish is descended from a wild living member of the species. To obtain the wild genes mother fish are carefully taken from the lake population every year in November – using a trawl net - in order to extract the fish roe.   After harvesting the eggs the mother fish are released back into the lakes and the natural rearing of the offspring, which spans about three years, begins. The fish are reared in cold, clear water without any outide interference or influence on nutrition, reproduction or behaviour. Some are purebred, others are refined into special cross-breeds. They then reach the Genussregion Ausseerland and are served to the MONDI guests. Tip: Guided tours behind the scenes of the fish farm are periodically offered as part of the MONDI guest programme.

Direct from the surrounding pastures

Best meat and more

We actively support our local farmers and want to inspire them to provide as much local produce as possible here in the Ausseerland.To preserve our landscape and to enable farming to thrive and to ensure we know exactly what is served on your and our plates. Whether it's meat, milk, cheese or honey: currently the best farms in the surrounding area supply us with their best produce.   They have joined forces in a marketing association, and chef Stefan Haas has been a loyal customer from the very beginning. He is free to visit the pastures regularly to give himself and his team a true insight. Whether it's calves, lambs, goats or cattle: in and around Grundlsee animals are reared in ideal conditions, mostly bred on small organic farms. The livestock spend the summer on the alpine pastures, in winter they return to the spacious barns. And in autumn? The cattle are allowed to roam in enclosed pastures much to the surprise of many a walker. So we really can guarantee that our food is lovingly produced in the immediate vicinity. Without chemicals or long transport routes. For the best possible animal welfare and the best taste and ingredients, some of which are delivered directly to our kitchen by their producers.
